Zesty Quinoa Salad with Tofu

Y's lunch today was inspired from one of the healthy meals my mother-in-law has been cooking these past few days. My toddler just loves quinoa with everything, and I thought I'd add a little twist to this salad by adding some calamansi (you can use lemon, too) as dressing. 


Zesty Quinoa Salad with Tofu

Ingredients

1/4 cup of quinoa, cooked
Diced ripe mango
Diced tomatoes
Diced green bell pepper
Tofu slices (fried lightly)
Calamansi 

Procedure

  1. In a pot, cook your quinoa for 10-15 minutes, or until the grains are soft. 
  2. On a plate, mix your cooked quinoa, mangoes, tomatoes, bell pepper, cooked tofu slices, and top with calamansi zest and juice.
