Easy Snack: Honey-glazed Sweet Potato Donut Holes with Chia Seeds
Here is a healthier alternative to our typical sugar-filled donut holes -great for kids and for health-conscious mommies and daddies, too!
Honey-glazed Sweet Potato Donut Holes with Chia Seeds |
Ingredients (makes 10 1.5" donut holes)
2 small golden sweet potatoes
1/8 cup of milk
1 tsp chia seeds
1/4 cup of all-purpose flour
Olive oil for frying
1-2 tbsp of raw honey
- Peel and boil the sweet potatoes until they are soft.
- In a separate bowl, mix the chia seeds with the milk so that they turn gelatinous before the sweet potatoes cook.
- Add the softened sweet potatoes to the milk + chia seeds. Mash the sweet potatoes and mix them until you get a homogenous mixture.
- Form 1 - 1.5-inch balls with your mashed sweet potato mixture and coat them lightly with flour before frying.
- Fry the sweet potato balls until their outside turns crispy.
- Glaze the fried sweet potato balls with raw honey.
