Potato Egg Salad with Grilled Radish

This easy-to-make but filling snack is a spin-off from my mother's well-loved potato salad. Y absolutely loves potatoes and hard-boiled eggs, and for a little twist, I added pan-grilled radish slices. 

Potato egg salad with celery and grilled radish slices



Ingredients

1 hard-boiled egg
6-8 pcs marble potatoes, sliced into halves
Around 1/2 cup sliced celery sticks
2 tbsp mayonnaise
1/2 of a radish, sliced
salt and pepper to taste (optional)
cheese slices (optional) 


  1. Boil your halved marble potatoes until they are soft enough.
  2. In a mixing bowl, mix the hard-boiled egg (sliced), cooked marble potatoes, celery slices, mayonnaise, and salt and pepper (optional). You may also add some cheese slices.
  3. Brush a separate pan with some olive oil and begin to grill/fry your radish slices until they turn soft. 
  4. Add the grilled radish slices on top of the salad.
