Thick Potato Soup with Malunggay
Y loves a good thick soup. He was able to finish this thick and creamy potato soup in less than 5 minutes -perhaps he found it perfect for the rainy weather.
Ingredients
1 large potato
1/2 cup of vegetable broth (I made one by boiling garlic, onion, carrots, and cabbage)
1/4 cup of heavy cream (optional)
Salt and pepper (optional)
Thyme
Malunggay leaves

- Boil your potato in your vegetable broth. It'll be easier to get the potato softer if you chop them into cubes/smaller pieces.
- Once they are soft enough to mash, use a fork/pestle to mash the potatoes into a thick consistency.
- If you wish to add heavy cream, you may add it once the potato has been mashed. You may add more vegetable broth if you want the soup to be a little more runny. Y prefers some texture in his soup so I didn't fully mash the potato to make it thick.
- Add your preferred condiments. I only added thyme (no salt and pepper) to make the soup more fragrant, and then I added some malunggay leaves before taking the soup out of the stove.
