Today's Pasta Salad: Malunggay, Tomatoes and Organic Purple Corn

Pasta salads are perfect for BLW babies! For Y's brunch today, I threw in some malunggay in olive oil, added fresh tomatoes, and organic purple corn over wheat pasta.

Today's Pasta Salad: Malunggay, Tomatoes and Purple Corn  for baby/toddler

Ingredients

2 cups of wheat pasta
1/2 cup of malunggay leaves, chopped
1 tbsp olive oil
1 whole tomato, diced
1/2 of a purple corn, pre-cooked

  1. Boil the pasta until al dente. 
  2. Once cooked, on a separate pan, heat the olive oil and add the chopped malunggay leaves and the pasta. Mix until the pasta has an even coating of oil and malunggay leaves.
  3. Serve the cooked pasta with fresh tomatoes and cooked purple corn kernels.
