Today's Pasta Salad: Malunggay, Tomatoes and Organic Purple Corn
Pasta salads are perfect for BLW babies! For Y's brunch today, I threw in some malunggay in olive oil, added fresh tomatoes, and organic purple corn over wheat pasta.
Ingredients
2 cups of wheat pasta
1/2 cup of malunggay leaves, chopped
1 tbsp olive oil
1 whole tomato, diced
1/2 of a purple corn, pre-cooked
- Boil the pasta until al dente.
- Once cooked, on a separate pan, heat the olive oil and add the chopped malunggay leaves and the pasta. Mix until the pasta has an even coating of oil and malunggay leaves.
- Serve the cooked pasta with fresh tomatoes and cooked purple corn kernels.
