4-ingredient Chunky Monkey Quinoa Bites

Y's upper molars are erupting, and his need to chomp on everything has resurfaced again! To alleviate his agony, I decided to make him some chewy chunky monkey bites made out of leftover quinoa. 


Chunky Monkey Quinoa and Oats Bites for Babies and Toddlers


Ingredients

1 cup cooked quinoa
1 cup partly-cooked rolled oats/ steel-cut oats
1 egg
Bananas

You may also add the ff to your liking:
1 tbsp muscovado/coco sugar
Chocolate Chips
Marshmallows



  1. Pre-heat your oven to 180 degrees Celcius. 
  2. Mix the cooked quinoa to your partly-cooked rolled oats. I chose to only partly-cook the oats as baking with fully-cooked oats would make the dough (and the cookies) too soft. 
  3. Add the egg and banana slices. Mix evenly.
  4.  Pour dollops of the oat-quinoa dough on a baking pan. Top the dollops with a slice of banana. 
  5. Bake for 10 minutes, or until you achieve the chewy consistency.
