Creamy Mashed Potatoes in 3 Ways + Mixed Fruits

Today's powerhouse brunch is creamy mashed potatoes with three toppings, plus fruits with whipping cream for his daily dose of sugar. 

Creamy mashed potatoes with corn, arugula, and spring onions + kiwi, grapes, and whipping for baby 




Ingredients 


2 big potatoes, peeled and cubed for easy boiling and mashing
1/4 cup of fresh corn kernels, cooked 
1 tbsp of chopped spring onions
2-3 arugula leaves 
1/2 cup of full-cream milk 
1 tbsp butter 
A dash of pepper to taste 

For the mixed fruits:
1 whole kiwi, sliced
7-8 pcs of grapes, in halves
1 tbsp whipping cream 

Procedure



  1. Boil your potatoes until soft. Strain the water and mash with a fork. 
  2. On a separate skillet, melt the butter and add the full-cream milk. 
  3. Add the cooked (mashed) potatoes into the milk and butter. Stir until you get a creamy, homogenous mixture.
  4. Add a dash of pepper to taste. 
  5. Separate the mashed potatoes into three (3) bowls/segments. In one bowl, add the cooked corn kernels, in another, add the chopped spring onions, and in the last, the arugula leaves. 
  6. Serve with mixed fruits topped with whipping cream.
