Steamed Okra and Eggplants on Ginger Lemongrass Rice: A Tamang Kain Recipe

Steamed Okra and Eggplants with Ginger Lemongrass Rice |
3 pcs okra, sliced diagonally
1 medium-sized eggplant, sliced diagonally
1/2 a cup of cooked rice
1 tbsp of ginger, minced
1 tbsp of minced lemongrass stalks
1 tsp olive oil for the fried rice
Procedure
- Steam your okra and eggplant slices until soft.
- On a separate pan, heat your olive oil, and sauté the minced ginger and lemongrass until they give off a nice aroma.
- Add the cooked rice to the ginger and lemongrass. Stir for around 1-2 minutes.
- Serve together.
