Baked Chicken with Olives and Basil + Homemade Marinara
I was in the mood to cook a little Italian-inspired dish yesterday, so I decided to bake some chicken fillet in olive oil, coated with herbs and olives! I also made marinara sauce that went so well with the olive-y taste of chicken.
1 1/2 cup chicken breast fillet, sliced into little strips
1/2 cup of fresh basil, slice into strips
8-10 pcs of green olives
Olive oil
2 pcs red, ripe tomatoes, minced
1 clove garlic
1/4 of an onion
Optional: 1/2 a teaspoon of coco sugar (I did not put any in this recipe.)
Procedure

Ingredients
1 1/2 cup chicken breast fillet, sliced into little strips
1/2 cup of fresh basil, slice into strips
8-10 pcs of green olives
Olive oil
For the marinara:
2 pcs red, ripe tomatoes, minced
1 clove garlic
1/4 of an onion
Optional: 1/2 a teaspoon of coco sugar (I did not put any in this recipe.)
Procedure
- Preheat your oven for 10 minutes at around 220-250 degrees celsius.
- Coat your bake-safe tray with olive oil, then layer your chicken, basil, and olives. Sprinkle some more olive oil on the chicken-herb mix for added flavor.
- Bake for 20-30 minutes, or until the chicken is fully cooked.
- On a pan, saute your garlic and onions, then add your minced tomato. You may put a little water to make the mix more sauce-y.
- Once cooked, sprinkle some parmesan.
- Serve with rice.
