Corn Malunggay Quinoa, Leftover Chicken + Ripe Plantains (Saba)

Y will be having quinoa for the first time today! I hope he likes it! :) 

Corn Malunggay Quinoa, Leftover Chicken, Ripe Plantains (Saba) for baby/toddler

Ingredients 


1/4 cup of quinoa (I used tri-colour quinoa today) 
1/4 cup of fresh corn kernels
Malunggay leaves, chopped
Olive oil

Leftover turbo chicken strips
Ripe saba (plantains) 


  1. Bring 1 cup of water to a boil, then add the raw quinoa and a dash of olive oil.
  2. Lower the heat and let cook for 15-20 minutes.
  3. Add the corn kernels and chopped malunggay leaves to the cooking quinoa, and let simmer for 5 minutes.
  4. Remove from heat. Serve with leftover chicken and ripe saba.
