Beetroot Rice Casserole with Steamed Broccoli
While at the grocery yesterday, my toddler randomly picked up a beetroot and wouldn't let go until the checkout counter. I have never cooked beets before, and I was surprised to find out how nutritious these pink root crops are!

Ingredient
1 small beetroot (cooked, blended into tidbits)
1 cup of brown rice
1/4 of an onion
1/4 cup heavy cream
1 tsp butter
5-6 broccoli florets (steamed)
Procedure

Procedure
- Melt the butter onto a shallow skillet, then sauté your onions until cooked.
- Pour in your rice and heavy cream. Add your blended beetroot gradually, until you get an even color and consistent.
- On a separate pot/on a steamer, steam your broccoli florets until soft.
- Serve. :)
