Beetroot Rice Casserole with Steamed Broccoli

While at the grocery yesterday, my toddler randomly picked up a beetroot and wouldn't let go until the checkout counter. I have never cooked beets before, and I was surprised to find out how nutritious these pink root crops are!




Ingredient

1 small beetroot (cooked, blended into tidbits)

1 cup of brown rice
1/4 of an onion
1/4 cup heavy cream
1 tsp butter

5-6 broccoli florets (steamed)

Procedure 


  1. Melt the butter onto a shallow skillet, then sauté your onions until cooked.
  2. Pour in your rice and heavy cream. Add your blended beetroot gradually, until you get an even color and consistent. 
  3. On a separate pot/on a steamer, steam your broccoli florets until soft. 
  4. Serve. :)
