Breaded Golden Camote Fries

Y undeniably loves camote (sweet potato) -steamed, boiled, baked, or fried. Today, I prepared some tempura-esque camote fries for his meryenda

Camote (sweet potato), breaded for baby 



Ingredients

1 pc camote (I used golden camote for this recipe), cut into thick wedges/strips
1 egg
1/2 cup of flour
1/2 cup of panko breadcrumbs
Olive oil

Procedure 


  1. Prepare three "stations" for your breading: the flour, the egg, and the breadcrumbs stations. 
  2. Coat your camote strips in flour, then egg, then breadcrumbs. Make sure that each strip is fully covered in each "station". 
  3. Pan fry your breaded camote strips onto a shallow skillet. 
  4. Before serving, strain excess oil using a kitchen towel.
