Broccoli Casserole

For Y's lunch today, I decided to bake a creamy broccoli casserole with some leftover chicken. This 4-ingredient dish was a hit! 

Baked broccoli and creamy chicken casserole for baby 


Ingredients

4-5 broccoli florets
Chicken breast fillet, diced
Heavy cream
Cheese (optional)
Rice - I used brown rice for this recipe.

Procedure

  1. Preheat the oven up to 180 °C.
  2. On a non-stick skillet, pre-cook your chicken fillet pieces by frying them lightly.
  3. Add 3-4 tablespoons of heavy cream to the chicken. You may also add cheese if you wish. Simmer for 2-3 minutes or until the mixture is thick and creamy.
  4. On an oven-friendly glass tray, layer your rice and broccoli florets, and then top with the creamy chicken mixture.
  5. Bake the casserole for 8-10 minutes, or until the broccoli becomes soft.
