Sautéed Squash, Malunggay, and Shrimp on Couscous

Y did not like shrimp when he first tried it a couple of days ago. Today, I tried to sauté shrimp with his favorite vegetables and he loved it! He still enjoys the taste and texture of his good ol couscous even though he has been mostly eating rice recently.
Squash, malunggay, shirmp, couscous for baby! 


Ingredients
1/8 of a squash, diced
Malunggay leaves
1 pc of shrimp, peeled and de-veined
1 clove of garlic
1/4 of an onion
Couscous (I used 1/3 cup couscous, 1/2 cup water)
1 tbsp butter or olive oil (for the couscous)
Procedure
  1. Sauté garlic and onion in a skillet until cooked.
  2. Add shrimp, then add the diced squash.
  3. Let simmer for 8-10 minutes, or until the squash is soft.
  4. Add malunggay leaves, let simmer for 1-2 minutes.
  5. On a separate pan, add water and couscous.
  6. Let cook for at least 5 minutes.
  7. Add butter or olive oil to the cooked couscous.
  8. Serve. :)
