Gabi (Taro Root) Pudding

Incorporating gabi (taro root) to snacks and sweets may seem unconventional, but I've always seen potential in this root crop as it is very rich in nutrients. Today, I decided to make pudding out of gabi, and sure enough, it was delicious!

Ingredients

2 pcs small (young) gabi/ taro root, pealed
2 egg yolks
1/4 cup of milk
1 tsp coco sugar (optional)

Procedure

  1. While preheating your oven up to 150 degrees, boil your gabi for around 8-10 minutes, or until it is soft.
  2. In a blender, combine the soft gabi, egg yolks, and milk (and sugar) and blend until you get a mixture similar to a pancake batter.
  3. Pour the batter in your ramekins/muffin tins. Bake for 5-7 minutes. Perform the toothpick test before taking out of the oven to make sure that the pudding is ready. 
  4. Serve with fruits!
