Chicken fillet, potatoes, and fresh basil on couscous

It's Y's first time to try couscous today and he liked it so much that he finished an adult serving in one sitting. It didn't come as a surprise, though, as he is not picky and he usually gets super excited when he is trying out new things.

Chicken fillet, potatoes, and fresh basil on couscous: A complementary feeding recipe for baby

Chicken fillet, potatoes, and fresh basil on couscous

Ingredients

1/4 cup couscous
1 pc marble potato (diced into 1 cm cubes)
half of a chicken thigh fillet (sliced into strips)
a fresh basil leaf
1 clove of garlic
butter/olive oil (optional)

Chicken fillet, potatoes, fresh basil, couscous

Procedure

1 Boil the chicken strips, garlic, and potato cubes in a pot. Let simmer until the chicken is cooked and the potato cubes are soft enough.
2 Once cooked, set the chicken and potatoes aside. Retain at  least 1/3 cup of the broth in the pot.
3 Under low heat, put the couscous into the chicken broth, and let cook for 5-10 minutes.
4 Once couscous is cooked (broth is fully absorbed by the grains), you may add olive oil/butter to taste.
5 Serve the chicken, potatoes, and cooked couscous in one bowl. Top with a sliced basil leaf for added flavour.

More info, disclaimer

Y is already 11 months, and we have practiced complementary feeding since he was 6 months. He was already allowed by his pediatrician to eat chicken by around 10 months for the following reasons: (1) our families had no history of allergies (2) he already has 8 teeth, and (3) he is developmentally advanced for his age.

If you are planning to cook this for your little one, please consult your pediatrician first. :)
