Baked Carrots, Potatoes and Malunggay topped with cheese

Y eats a lot for an 11-month old, but this doesn't bother us a lot as he is already very active. He eats 3 big meals and 2 snacks a day. As he is still exclusively breastfed, he also nurses in between meals.
Baked veggies, red rice, strawberries, and organic biscuits for baby  

This is how we usually give him food:
  1. He has a "main course" which is most of the time vegetables + carbs (rice/rolled oats/pasta/couscous).
  2. He gets a serving of fruits after the main course.
  3. He eats a light snack an hour (or two) after his main course right after he nurses.
For today, I baked vegetables with cheese for his main course. He loved munching on the soft vegetable sticks, but I think he enjoyed squishing his strawberries more (see: baby-led weaning).

Ingredients

1/2 carrot, sliced into sticks
1 whole potato, sliced into sticks
A handful of malunggay (moringga) leaves
Olive oil
Cheese (optional)

Procedure 

  1. Pre-heat the oven for 5-10 minutes while you prepare the veggie sticks.
  2. Lay down your vegetables on a baking pan/baking tray. Brush some olive oil  on the veggie sticks so that they won't stick to the pan/tray.
  3. Top with grated cheese. (optional)
  4. Bake under medium heat for 5 minutes, or until you've achieved desired softness.
  5. Serve with rice.
