Ratatouille for Y!

Ratatouille is something I've always enjoyed -both the Disney movie and the vegetable dish. For this version, I found little organic eggplants perfect for Y's spoonfuls.

Ratatouille for baby: eggplants, zucchini, bell pepper, tomatoes



Ingredients

2 pcs little eggplants, cut thinly
1/2 of a zucchini, chopped into little cubes
1/2 of a red bell pepper, chopped into little cubes
3 pcs red ripe tomatoes, chopped finely
1/4 of an onion
1 clove or garlic
5-6 fresh basil leaves, chopped into ribbons
Some olive oil

Procedure

  1. Cook the eggplant slices on some olive oil until they turn brown and soft. Set aside.
  2. In the same way, cook the zucchini on some olive oil until soft. Set aside.
  3. Saute garlic, onions, and red bell peppers in olive oil. Add chopped tomatoes. Simmer until the juices come out.
  4. Once the tomato/marinara is cooked, put in the cooked eggplants and zucchini. Let simmer for a few minutes, then add fresh basil leaves.
  5. Serve with couscous or rice.
